Strawberry Cake Mix Cookies
You wander into the kitchen looking for a little something sweet to eat, but all you find is that your kids have wiped out every single cookie and snack cake in the house. There’s a cake mix on the shelf in the pantry, but you really don’t want to bake and frost a cake.
Wait a minute. Did you know you can use a cake mix to make cookies? Absolutely!
And it only takes 4 ingredients (including the cake mix).
And the cookies are soft and chewy.
These may be the best, most simple cookies you’ll ever have.
You can make these cookies using almost any cake mix flavor you like. Today I’m sharing the recipe for my Strawberry Cake Mix Cookies. I especially like to make strawberry cake mix cookies for Valentine’s Day, Easter, and spring in general.
Strawberry Cake Mix Cookies
Ingredients:
- Strawberry Boxed Cake Mix
- 2 Eggs
- 1/2 c Vegetable Oil
- 1 1/2 c White Chocolate Chips
In a large mixing bowl, combine dry cake mix, eggs, and vegetable oil. Mix well.
Add white chocolate chips and mix until they are combined well throughout the batter.
Line a baking sheet with parchment paper or a silicone baking mat. Place heaping spoonfuls of the batter onto the prepared pan. Leave an inch or more apart. Bake for 15-18 minutes. Allow to cool on baking pan for 3-5 minutes, then transfer to a wire rack to cool.

- In a large mixing bowl, combine dry cake mix, eggs, and vegetable oil. Mix well.
- Add white chocolate chips and mix until they are combined well throughout the batter.
- Line a baking sheet with parchment paper or a baking mat. Place heaping spoonfuls of the batter onto the prepared pan. Leave an inch or more apart. Bake 15-18 minutes. Allow to cool on baking pan for 3-5 minutes, then transfer to a wire rack to cool.
