  2. Next, take a large mixing bowl. Pour in the entire contents of the lemon cake mix package.
  3. Crack the egg into the large bowl. The egg acts as a binding agent, ensuring your cookies maintain their shape.
  4. Then, add the whole container of whipped topping. This ingredient adds lightness and moisture, making your cookies irresistibly soft and chewy.
  5. Combine these ingredients with a sturdy spoon or a hand mixer on a low setting. You’re looking for a uniform and sticky dough. Be patient; it might seem too thick at first, but it will come together beautifully.
  6. Once mixed, create small balls of dough. I like to use a cookie scoop or small ice cream scoop to ensure my cookies are about the same size. This also help them bake evenly.

  • Add a lemon glaze to your cookies by mixing powdered sugar with lemon extract. Top the cookies after they have completely cooled. 
  • Use another flavor of cake mix such as strawberry to make strawberry crinkle cookies. Use chocolate cake mix to make chocolate crinkle cookies. Make crinkle cookies using other cake mixes such as spice cake, butter pecan, funfetti, or even white cake mix and you can make them any color with food coloring.
  • No eggs? You can substitute 1/2 cup vegetable oil instead. 
  • If your dough is really sticky, place it in the refrigerator for about 10 minutes before scooping and forming it into balls.
  • Up the lemon flavor by adding fresh squeezed lemon juice and lemon zest to your cookie mix.
  • Add mix-ins to your dough such as sprinkles, chocolate chips, white chocolate chips, or dehydrated marshmallows.
  • Do not overbake your cookies. Bake until they are just set around the edges. This will achieve the desired soft and chewy texture.

How to Store Lemon Crinkle Cookies with Cake Mix

Keep in an airtight container at room temperature. They will keep 4-5 days. (If they last that long!)

You can also freeze Lemon Crinkle Cookies. Place them on a baking sheet and put them in the freezer 1-2 hours. At that point, they will be frozen enough to be placed in an airtight container. They will last up to 3 months in the freezer. To thaw, simply let them sit on the counter for about 30 minutes and enjoy.

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  • Combine cake mix, whipped topping, and an egg in a large mixing bowl. Stir with a spoon or electric mixer until well combined.
  • Fill a shallow bowl or plate with the powdered sugar.
  • Use a cookie scoop to spoon out portions of dough and drop into powdered sugar. Turn to coat all sides of the cookie.
  • Place coated dough balls onto prepared baking sheet 1-2 inches apart.
  • Bake for 8-10 minutes or until cookies are done around the edges.
  • Remove from the oven and let sit on the baking sheet for about 5 minutes to set. Then transfer to a wire cooling rack.
