There’s something truly magical about those Lucky Charm marshmallows that’s unlike any other flavor. I experimented with the combination of white chocolate chips and the colorful, tasty marshmallow bits. Mixing these with a basic white cake mix and a bit of green food coloring created Lucky Charm Cookies. From the cereal box and now as a cookie, it’s still one of my favorite flavors.

  • 1/2 cup vegetable oil adds moisture and helps create a chewy texture for our cookies.

  • 1 cup of Lucky Charms marshmallows: These are the stars of the show! You can use any kind of rainbow marshmallows, but I prefer sorting them right out of the cereal box.

Mix until everything is combined and the green color is even throughout the cookie dough. Scrape down the sides of the bowl to ensure everything is mixed well. For best results, do not overmix.

  • 10 drops green food coloring optional
  • ¾ cup white chocolate chips
  • 1 cup Lucky Charms Marshmallows

  • Use a cookie scoop to scoop out dough balls. Place them 1-2 inches apart on the baking sheet allowing room to spread as they bake.
  • Press a few extra Lucky Charms marshmallows on top of each cookie.
  • Bake for 10-12 minutes or until the edges are barely golden brown.
  • Remove from oven and allow cookies to cool on baking sheet for 5 minutes before transferring them to a wire cooling rack or platter.
