Baked Honey Curry Chicken
For a recipe to qualify as a great weeknight dinner it needs to be quick, no-fuss, and inexpensive. That’s exactly why this Baked Honey Curry Chicken is a regular at our dinner table. All you need to do is place chicken pieces on a pan, mix up the sauce, and pour it on top. It takes an hour to bake and requires basting every 15 minutes, but that also works out great for homework time. I can sit at the kitchen table helping the kids with homework and baste as needed. By the time dinner is ready, homework is done as well. It’s a win-win!
Baked Honey Curry Chicken
Ingredients:
- 3 lbs Chicken Pieces, bone in and skin on – You can use a whole chicken cut up, legs or thighs. I mostly use thighs when I make it.
- 1 Stick of Butter, melted
- 1/2 cup Honey
- 2 Tbs Prepared Mustard
- 1 tsp Salt
- 1 tsp Curry Powder
Begin by covering a shallow baking pan with aluminum foil. It will save you some scrubbing time after dinner!
Place chicken pieces skin side up on a prepared shallow baking pan.
Melt butter in a large measuring cup.
I doubled this recipe for my family of 7,
so that’s why the picture shows a full cup of melted butter. 😉
Add all the other ingredients into the measuring cup with the melted butter.
If your kids are in the kitchen with you, this is a fun lesson on density!
See how the butter floats when you add the other ingredients? Cool!
Mix the sauce well then pour over the chicken pieces.
Be sure to cover every single piece with the sauce!
Bake in a 350 degree oven for one hour, basting every 15 minutes.
The skin should be golden brown.
If you like it a little darker, turn the broiler on for a few minutes,
but watch it closely so it doesn’t burn.

- 3 lb Chicken Pieces bone-in and skin on
- 1 Stick of Butter melted
- 1/2 cup Honey
- 2 Tbs Prepared Mustard
- 1 tsp Salt
- 1 tsp Curry Powder

- Preheat oven to 350 degrees.
- Cover a shallow baking pan with aluminum foil and spray with cooking spray.
- Place chicken pieces skin side up on prepared pan.
- Melt butter in large measuring cup. Then add all other ingredients with the melted butter. Stir well.
- Pour sauce over chicken pieces being sure to cover every piece.
- Bake for one hour, basting every 15 minutes.
