Quick Key Lime Coconut Cake Mix Cookies
These soft baked Key Lime Coconut Cake Mix Cookies would be perfect for a St. Patrick’s Day or Easter dessert. So easy to make, too!

I’ve been experimenting with my Cake Mix Cookie recipe and wanted to create a pretty green cookie for St. Patrick’s Day and Easter. Don’t these green cookies just scream, “Springtime!” I wanted something different than the mint chocolate chip flavor that seems to dominate this time of year. Key Lime has always been a favorite of mine, so that’s what I decided on.
When I couldn’t find a lime flavored cake mix at my grocery store, I headed over to the instant pudding section and found a Key Lime Coconut flavored one. Yum! Coconut would be a great addition to my cookies, so I had my inspiration.
