Key Lime Coconut Cake Mix Cookies
I’ve been experimenting with my Cake Mix Cookie recipe and wanted to create a pretty green cookie for St. Patrick’s Day and Easter. Don’t these green cookies just scream, “Springtime!” I wanted something different than the mint chocolate chip flavor that seems to dominate this time of year. Key Lime has always been a favorite of mine, so that’s what I decided on.
When I couldn’t find a lime flavored cake mix at my grocery store, I headed over to the instant pudding section and found a Key Lime Coconut flavored one. Yum! Coconut would be a great addition to my cookies, so I had my inspiration.
Key Lime Coconut Cake Mix Cookies
Ingredients:
- White Boxed Cake Mix
- Coconut Key Lime Instant Pudding
- 2 Eggs
- 1/2 c Vegetable Oil
- 1 c White Chocolate Chips
- 1/2 c Sweetened Coconut Flakes
- 1 Lime (not pictured)
In a large mixing bowl, combine dry cake mix, dry instant pudding mix, eggs, and vegetable oil. Mix well.
Add the zest of one lime.
Add the juice from one lime.
Add a few drops of green food coloring and mix well.
Form dough into 1 1/2 inch balls and place 1-2 inches apart on parchment lined cookie sheet. Top with a few extra coconut flakes and press 3-5 white chocolate chips into the top.
Bake in 350 degree oven for 12 minutes. Allow to cool on cookie sheet for about 5 minutes then move to cooling rack until completely cooled off.

Key Lime Coconut Cake Mix Cookies
Ingredients
- White Boxed Cake Mix
- Coconut Key Lime Instant Pudding

- 3-5 drops Green Food Coloring if desired
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine dry cake mix, dry instant pudding mix, eggs, and vegetable oil. Mix well.
- Add the zest and juice from one lime. Add 3-5 drops of green food coloring. Mix well.
- Add white chocolate chips and coconut. Mix until they are combined well throughout the batter.
- Line a baking sheet with parchment paper or a baking mat. Form dough into 1 1/2 inch balls and place 1-2 inches apart on parchment lined cookie sheet. Top with a few extra coconut flakes and press 3-5 white chocolate chips into the top.
- Bake 12 minutes. Allow to cool on cookie sheet for 3-5 minutes, then transfer to a wire rack to cool.
