Even though our family loves lasagna, I don’t make it that often because it takes so much time to put together. You have to cook the meat, make the sauce, mix the ricotta and cheeses together, boil the noodles, and then after all that you have to layer it into a pan and bake. It is delicious, but I rarely have that much time to spend making dinner.

That’s why I’m so excited to share this Spicy Lasagna Soup recipe with you today! You could even call it Lazy Lasagna Soup (that’s what I almost named this recipe) because it is such a lazy way to make lasagna. You get all the taste of a traditional lasagna, but everything is cooked in one pot and ready to serve in about 40 minutes.

The Best Pot for Lazy Lasagna Soup

A Dutch Oven is my favorite pot to use for One Pot Meals. I use it regularly to cook all sorts of soups and stews. Some of our family favorites are Dutch Oven Chicken Noodle Soup, Easy One Pot White Chicken Chili, Quick and Easy Hamburger Vegetable Soup, Best Beef and Sausage Chili, and Instant Loaded Potato Soup.

A Dutch Oven is a large heavy duty pot with a heavy bottom, straight sides, and a tight fitting lid. It’s similar to a stock pot but with shorter sides. The thick bottom of the pot allows for even heat distribution, and it withstands high heat for searing and braising. It is an excellent pot for making soups. Dutch Ovens can be made of ceramic, stainless steel, aluminum, or cast iron. Here are a couple I recommend.

Bring a little color into your kitchen with this enameled cast iron dutch oven. I prefer to use a cast iron dutch oven when I’m slow-cooking large meats like a beef roast or pork roast. This one is available in 3 sizes: 4.3-quart, 6-quart, and 7.3-quart.

Ingredients for Spicy Lasagna Soup

  • ground beef
  • spicy Italian sausage
  • tomato paste
  • onion powder
  • dried oregano
  • garlic powder
  • salt and pepper
  • crushed tomatoes
  • tomato sauce
  • chicken broth
  • heavy cream
  • lasagna noodles
  • ricotta cheese
  • shredded mozzarella
  • parmesan

How to Make Spicy Lasagna Soup

Brown the ground beef and hot Italian sausage in a large stock pot over medium heat. Drain off any excess grease.
Add tomato paste, garlic powder, onion powder, oregano, black pepper, red pepper flakes, and salt. Stir to combine.

Add crushed tomatoes and tomato sauce into the pot and stir.
Turn the heat up to medium-high, then add the chicken broth. (For a thinner soup consistency use 4 cups. For a thicker version use 3 cups.)

Next, add the heavy cream. Break the lasagna noodles into 1-2 inch strips and add them into the pot.
Bring the soup up to a boil, stirring frequently.
When it starts to boil, reduce the heat to medium and continue to cook for 10-15 minutes stirring occasionally or until the noodles are done.

Spicy Lasagna Soup with Ricotta topping

While the noodles are cooking, you can mix up the ricotta topping.
In a medium-sized serving bowl, combine ricotta cheese, shredded mozzarella, shredded parmesan, pepper, garlic powder, onion powder, and dried oregano. Stir to combine. Set aside to serve as an optional topping with the soup.



  • ADJUST THE HEAT: If you don’t like spicy foods, use mild sausage and omit the red pepper flakes.
  • MEAT: Use ground chicken or turkey and swap out the sausage for turkey sausage to make a leaner version of Lasagna Soup.
  • PASTA: Substitute any kind of pasta like elbow macaroni or ziti. Any kind will work!
  • ADD VEGGIES: Saute some vegetables in the pot after the meat is cooked. You can add diced carrots, celery, onions, garlic, or bell peppers. Add fresh spinach in the last 5 minutes of cooking.
  • USE SPAGHETTI SAUCE: Substitute your favorite jar of spaghetti sauce instead of using tomato paste and tomato sauce.

How to Serve Lasagna Soup

Ladle the Spicy Lasagna Soup into bowls. Top with a dollop of the ricotta mixture. Garnish with Italian seasoning or fresh basil.

Storage and Leftovers

STORAGE: Leftover Spicy Lasagna Soup will keep 4-5 days in the refrigerator. Place it in an airtight container.

HEATING LEFTOVERS: The soup will thicken when stored, so you may want to add a couple of tablespoons of chicken broth before heating. To reheat a large batch, put it in a large pot over medium heat. Stir occasionally until heated through. For single-serving meals, microwave on high for about 90 seconds.
