Quick and Easy Hamburger Vegetable Soup
This quick and easy Hamburger Vegetable Soup has been a family favorite for many years. I remember my Mom making this on a regular basis, and my kids will remember it the same way. It comes together quickly making it perfect for a week night dinner. It’s hearty enough for a satisfying meal, and is an easy way to get some veggies into your family.
Quick and Easy Hamburger Vegetable Soup
Ingredients:
1.5 pounds Ground Beef
1 large Baking Potato
2 Tbs Italian Seasoning
1 lb bag Mixed Vegetables, frozen
2 cans Diced Tomatoes (I used basil, onion, and garlic flavored)
1 box Beef Stock
Place peeled, diced potato into a small pot. Fill with enough water to cover the potatoes completely. Bring to a gentle boil. Cook for 12-15 minutes or until just done. When you can stick them with a fork, they are done. You want them soft but not falling apart.
In a large pot, cook ground beef until browned. Drain excess grease from the pot, then add 1 tablespoon of the Italian Seasoning and stir.
Add beef stock, frozen vegetables, and canned tomatoes to the pot.
Add cooked potatoes and stir gently.
When all ingredients are combined, add another tablespoon of Italian Seasoning. Stir, then let simmer for 15-20 minutes or until vegetables are cooked.
Serve with bread, and enjoy!
