Spring Mix Goat Cheese Salad
Do you ever need an easy but tasty salad recipe to bring to potluck meals or to feed a lot of people? Spring Mix Goat Cheese Salad is a no-fuss “dump recipe” that requires no chopping, peeling or prep work of any kind. If you can open packages, you can make this salad! It’s great for when you’re in a hurry but don’t want to sacrifice taste or presentation. This Spring Mix Goat Cheese Salad is a recipe you need in your collection!
I was recently asked to help provide a meal for a funeral reception. The funeral was in the middle of a very busy day for me, but there is no way I could say no. I volunteered to bring a salad. I picked up the ingredients at the grocery store including salad dressing, a disposable aluminum pan, and disposable serving utensils. Then I put the whole salad together in my office. I took pictures with my phone as I assembled the Spring Mix Goat Cheese Salad. The whole preparation, including taking the pictures, took about 10 minutes.
Spring Mix Goat Cheese Salad
Here’s what you’ll need:
- 2 bags Spring Mix greens
- 1 container Grape Tomatoes
- 1 container Feta Cheese, crumbled
- 1/2 bag Almond Salad Topping (or any flavor you like)
- Raspberry Vinaigrette or Balsamic Honey Salad Dressing
NOTE: When I took these pictures I was preparing this salad to feed a lot of people. I doubled the above recipe. You can scale it as large or as small as needed.
Dump the bag of Spring Mix greens into a pan and spread out evenly.
Leaving the grape tomatoes in their original container, open the top and rinse them under cool, running water. The container is designed with holes in the bottom, so the excess water will run off. Give it a few shakes to remove as much water as you can, then dump those on top of the greens. Spread out evenly.
Crumbled goat cheese is the next layer. For this salad I used Tomato and Basil flavored feta. If you can find flavored feta cheese, I recommend using it!
And finally, the Almond Salad Topping is the last layer.
I prefer to leave the salad undressed and serve the salad dressing on the side.
Spring Mix Goat Cheese Salad is delicious served with a slightly sweet dressing. My favorites are Raspberry Walnut Vinaigrette and Balsamic with Honey. If you are taking this recipe to a potluck, cover it with aluminum foil and don’t forget to pick up some disposable serving utensils.
Spring Mix Goat Cheese Salad
Ingredients
- 2 bags Spring Mix greens
- 1 container Grape Tomatoes
- 1 container Feta Cheese crumbled (I used Tomato Basil flavored feta.)
- 1/2 bag Almond Salad Topping or any flavor you like
- Raspberry Vinaigrette or Balsamic Honey Salad Dressing
Instructions
- Dump the bag of Spring Mix greens into a pan and spread out evenly.
- Rinse the Grape Tomatoes under running water, shake off excess water, then spread evenly over greens.
- Add crumbled goat cheese for the next layer.
- Finally, top with Almond Salad Topping.
- Serve salad dressing on the side.
