There’s something about cooler weather that makes me want a bowl of something hot and delicious. If you don’t think you have time to make home cooked comfort food during the week, this Easy One Pot White Chicken Chili might just change your mind. And since it’s all cooked in one pot, you’ll also spend less time cleaning up. Bonus!

Ingredients for Easy One Pot White Chicken Chili
How to make Easy One Pot White Chicken Chili
Heat a tablespoon of olive oil over medium heat in a 6 quart dutch oven.
Add onion and saute until lightly brown about 4-6 minutes.
Next, add garlic and saute another 30 seconds.
Then add diced chicken to the pot and cook 5-7 minutes, stirring occasionally to cook evenly on all sides.
Pour in the chicken broth and jar of jalapenos. (If you like spicier chili, include the liquid in the jar.) Add the beans, cumin and oregano into the pot.
Bring to a boil, then reduce heat to medium/low. Simmer for 20 minutes.
Stir in 2 cups of shredded cheese and serve!
Tips & Tricks
- Make this recipe even quicker by using leftover or rotisserie chicken. Just cut it into bite sized pieces and omit the 4-6 minutes of saute time for cooking the chicken.
- Chop your jalapenos before adding to the pot if you prefer smaller pieces.
- Substitute canned green chilies instead of jarred jalapenos, or use both if you like it extra spicy.
- Use different kinds of white beans such as Navy beans or cannellini beans. You could even use all 3 types of beans together if you like a lot of beans.
- Serve with even more garnish choices such as sour cream, lime wedges, corn chips or tortilla chips, chopped green onions, and different kinds of shredded cheese.

- 1 med Onion
- 4 oz Jalapenos, pickled jar
- 4 cups Great Northern Beans
- 32 oz Chicken broth
- 2 tbsp Garlic chopped
- 2 tbsp Cumin
- 2 tbsp Oregano
- 2 cups Cheddar cheese shredded
