You may be thinking that Carbonara with Crispy Prosciutto sounds a little too fancy for a weeknight dinner, but I assure you it’s one of the easiest meals you’ll ever make. Your family will love it because it’s a delicious, rich, filling comfort food. You’ll love it because it’s so quick and easy, and you can have it on the table in under 30 minutes.

Carbonara is also a great meal to serve in the summertime. With no long baking time to heat up your kitchen, just one pot to boil on the stove and not a lot to clean up, you’ll get in and out of the kitchen fast leaving you more time for summer fun.

For this recipe I used prosciutto to add a crispy element to the pasta dish. You can pick up prosciutto from the deli section of the grocery store. It’s an Italian meat from a pig’s hind leg and is usually sliced thin. You may have seen prosciutto used on charcuterie boards or wrapped around cheese. While you can eat it right out of the package, it can also be cooked to a crispy texture.

Customize this recipe with substitutions and additions to mix up the flavors. For the meat use bacon, ham, or pancetta. You can also add veggies like peas, spinach or broccoli.

Ingredients for Carbonara with Crispy Prosciutto

  • Pasta
  • Olive oil
  • Prosciutto
  • Egg yolks
  • Grated parmesan cheese
  • Garlic powder
  • Lemon zest
  • Fresh mozzarella cheese
  • Salt and pepper
  • Fresh basil

How to Make Carbonara with Crispy Prosciutto

Preheat the oven to 400 degrees. Lightly coat a baking sheet with olive oil and lay the prosciutto in a single layer. Bake for 7 minutes or until crispy. It can burn quickly, so keep an eye on it.
Cook pasta according to package directions.

While the pasta cooks, add the egg yolks, parmesan cheese, garlic powder and lemon zest into a small bowl. Beat together until it becomes a thick paste texture.

When the pasta is al dente, drain it but reserve 3/4 cup of the pasta water.
Slowly pour the hot pasta water over the egg mixture while beating quickly. It will become a creamy sauce.
Pour the sauce over the cooked pasta and toss to coat it.
Serve the pasta in bowls or on a plate. Top with torn crispy prosciutto, fresh mozzarella and basil.

Storing and Reheating Leftovers

Allow the carbonara to cool. Then place in an airtight container. Leftover Carbonara with Crispy Prosciutto can be stored in the refrigerator up to three days.
