The Story Behind This Recipe

This recipe actually happened by accident.

I originally planned to make traditional haystacks with butterscotch chips. You know the ones. Sweet, crunchy, and always on the Easter table. But when I went to grab the butterscotch chips, I realized I was out. I ran to the store, and they were out too.

So I came home and did what I always do. I checked my pantry.

I had white chocolate chips because I always keep them on hand for these Strawberry Cake Mix Cookies. They are my husband’s favorite, so I never let those run out. I also had peanut butter.

And honestly, can you ever go wrong with chocolate and peanut butter?

Turns out, no. You cannot.

These white chocolate peanut butter Bird’s Nest Cookies might actually be better than the butterscotch version.

Here is what you will need:

  • 4 cups chow mein noodles: These give the cookies their crunchy texture and naturally form that perfect nest shape.

  • 12 ounces white chocolate chips: The sweet base that melts down and binds everything together.

  • 1 cup peanut butter: Adds richness, balances the sweetness of the white chocolate, and helps the mixture set firmly.

  • 1 package malted Easter eggs: The decorative finishing touch that makes these look like little bird nests. You can also use jelly beans or mini chocolate eggs (Cadbury Mini Eggs work great!).

How to Make Bird’s Nest Cookies

  1. Spray a muffin pan with non-stick cooking spray.
  2. Pour the white chocolate chips into a microwave-safe bowl. Microwave on high in 30-second intervals, stirring after each interval, until the chocolate is melted and smooth.
  3. Add the peanut butter to the melted white chocolate. Stir until smooth and fully combined.
  1. Fold the chow mein noodles into the chocolate mixture. Gently stir until every noodle is completely coated in the white chocolate peanut butter mixture.
  2. Spoon the coated noodles into the prepared muffin pan.
  3. Use your finger or the back of a spoon to gently press the noodles up the sides, forming a small well in the center for the eggs.
  4. Allow the nests to sit at room temperature for about 1 hour to harden. If you are short on time, place them in the refrigerator to speed up the process.
  5. Once set, use a butter knife to gently loosen the nests from the muffin pan.
  6. Place 3 malted eggs into each nest.

That is it. No baking. No stress.

Pro Tip: How to Melt White Chocolate Without Seizing

White chocolate can be a little temperamental.

  • Always microwave in short 30-second bursts.

  • Stir after every interval, even if it does not look fully melted yet.

  • If it seems too thick, stir in a small spoonful of coconut oil to smooth it out.

Slow and steady wins here. Rushing will get you a clumped mess of white chocolate.
