Instructions
 

  • Brown ground beef and drain fat from the pan.
  • Prepare the tortellini according to package directions. Drain and set aside.
  • Stir in the taco seasoning and about 1/3 cup of water into the cooked and drained ground beef. Stir well.
  • Add the canned tomatoes, beans, and corn to the skillet Be sure to drain the liquid from the beans and corn before adding to the skillet. Stir together well
  • Reduce heat and simmer on low 5-10 minutes.
  • Add the cooked tortellini to the skillet and gently fold it into the mixture. Top with shredded cheese and serve. Garnish with chopped cilantro and green onions.
