Here’s a Mexican version of a “meat and potatoes” dinner that your family will love. It’s quick and easy to make and perfect for an easy weeknight dinner.

If you’ve had a mushy Tater Tot Casserole with cream of mushroom soup, let me assure you this one is different. The best tater tots have a crispy outside, and I’ve made sure that crunchy tater tot exterior is preserved in this dish.

There are lots of additions and variations you can create with this basic Tex Mex Tater Tot Casserole recipe. First we’re going to start with the basics, then we’ll get into additions and side dish suggestions.

  • Frozen Tater Tots
  • Ground Beef
  • Taco Seasoning Mix
  • Salsa
  • Shredded Cheddar Cheese or Mexican Cheese Blend

How to Make Tex Mex Tater Tot Casserole

Preheat the oven to 425 degrees Fahrenheit.
Lightly spray a 13×9 baking dish with non-stick cooking spray.
Place all the tater tots into the baking dish and bake for 10 minutes.
Remove from the oven and set aside.

Brown the ground beef and drain off excess fat. Reduce heat to low.
Add taco seasoning mix, water, and salsa into the pan with the ground beef.
Stir together and cook over low heat for 1-2 minutes until well combined.
Remove from the heat and set aside.

Remove about half of the tater tots from the bottom of the pan and set aside. Spread the remaining tots in a single layer on the bottom of the baking dish.
Pour the ground beef mixture on top of the tater tots being sure to spread it out evenly.
Add half of the shredded cheddar cheese in a layer on top of the ground beef mixture.

Place the remaining tater tots on top of the cheese, then cover the top of the casserole with the rest of the shredded cheese.
Bake for 20-25 minutes or until the cheese is bubbly and the tater tots are golden brown.

Make a Healthier Tater Tot Casserole

You can make a healthier tater tot casserole by making the following substitutions:

  • Use ground chicken, ground turkey, or lean ground beef
  • Select a low fat cheese to use in this recipe
  • Mix in some extra veggies by adding sautéed chopped onions and bell pepper to the meat mixture

To make a heartier meal or just to change it up a bit now and then add a few or all of these additional ingredients to the meat mixture:

For crispier tater tots, reheat your tater tot casserole in the oven at 350 degrees for 20 minutes.
You can also reheat it in the microwave for 1-2 minutes, but the tater tots will not be crisp.

  • cup Water
  • 1 cup Salsa
