Rudolph Reindeer Quesadillas
This is the kind of meal every Mom needs in her arsenal. This is the kind of dinner that kids will actually eat and even the most tired end-of-the-day Mom can pull off in 5 minutes. You probably don’t even need to read all these directions because you’ve got everything you need from just looking at the picture, but I’m going to spell it out here for those brain-numbing days that happen to us Moms. Let’s make Rudolph Reindeer Quesadillas and get these kids fed and happy for the evening.Â

How to make Rudolph Reindeer Quesadillas
Heat a non-stick skillet on medium-high heat.
Place one tortilla into the skillet.
Top tortilla with shredded cheese. Spread cheese all the way to the edge without spilling over onto the skillet.
Place second tortilla on top.
Allow to heat for about 1 minute until cheese starts to melt.
Flip quesadilla over and allow the tortilla on the other side to brown. Make sure the cheese is completely melted.
Remove quesadilla from skillet and place on a cutting board.
Cut quesadilla into 4 equal quarters.
Place a pretzel on the top corners of each quarter.
Use 2 black olive slices below the pretzels for the reindeer eyes.
Place a cherry tomato on the point of each quarter for Rudolph’s nose.
Tips & Tricks
- You can use any kind of tortilla to make quesadillas including wheat or low carb versions.
- Try different kinds of shredded cheese or a mixture of cheeses like cheddar, Mexican blend, mozzarella, or Italian blend.
- For a heartier meal add protein such as chicken, beef, fish, or shrimp. This is a great way to use leftover meat from another meal.
- Add veggies like sautéed onions and mushrooms for another layer of flavor.
Rudolph Reindeer Quesadillas
Ingredients
- 2 Tortillas
- 1/2 cup Shredded cheese
- 8 Pretzel twists
- 8 Black olive slices
- 4 Cherry tomatoes
Instructions
- Heat a non-stick skillet on medium-high heat. Then place one tortilla into the skillet.
- Top tortilla with shredded cheese spreading the cheese all the way to the edge without spilling over onto the skillet.
- Place second tortilla on top. Allow to heat for about 1 minute until cheese starts to melt and bottom tortilla is lightly toasted.
- Flip quesadilla over and allow the tortilla on the other side to become lightly toasted. Make sure the cheese is completely melted.
- Remove quesadilla from skillet and place on a cutting board. Cut quesadilla into 4 equal quarters.
- Place a pretzel twist on the top corners of each quarter.
- Use 2 black olive slices below the pretzels on each quarter for the reindeer eyes.
