Pumpkin Spice Chocolate Chip Cookies

There’s nothing like a homemade chocolate chip cookie. Even though we purchase ready-made ones from our grocer’s bakery all the time it’s still a huge treat every time I whip up a batch of chocolate chip homemade cookies. 

Now imagine that homemade goodness with a fall twist. Pumpkin spice! It really makes for a delicious combination I’m sure you and your family are going to love. Plus, these cookies bake up soft and chewy. Is your mouth watering yet? Let’s get baking!

Pumpkin Spice Chocolate Chip Cookies Ingredients

  • All purpose flour
  • Baking powder and baking soda
  • Pumpkin Spice
  • Salt
  • Granulated sugar and brown sugar
  • Vegetable oil
  • Egg
  • Vanilla
  • Canned pumpkin
  • Chocolate chips

How to make Pumpkin Spice Chocolate Chip Cookies

Preheat oven to 350 degrees.
Line baking sheets with parchment paper.
Whisk together flour, baking powder, baking soda, pumpkin spice and salt in a bowl until well combined. Set aside.

Combine sugar, brown sugar, and vegetable oil in a separate bowl. Use a hand mixer to mix well. 
Next, mix in the egg, vanilla, and pumpkin. 

Add in the flour mixture a little at at time while mixing on low speed until well incorporated. 
Fold in chocolate chips with a spatula. 

Spoon onto lined baking sheets leaving 1-2 inches between cookies. 
Bake for 11 – 13 minutes. 

Allow to cool on the baking sheet. Then transfer to a platter to serve and enjoy!

Tips & Tricks

  • Be sure to use canned pumpkin, not fresh (better consistency with canned), and not pumpkin pie filling (has added sweeteners and spices).
  • When adding the flour, don’t over-mix or your cookies could bake up flatter.
  • Using parchment paper on your baking sheets instead of cooking spray or grease will stop the cookies from spreading out too much while baking.
  • Don’t substitute olive oil in this recipe as it will affect the taste of the cookies.

Notes

  • Pumpkin pie spice: If desired, you can use 1/4 teaspoon each: ground nutmeg, ground allspice, ground cloves, and ground cinnamon instead of pumpkin pie spice. 
  • Chocolate chips: Try substituting white chocolate chips for a twist on this recipe. 
  • Avoid over baking to keep the cookies soft and chewy.
