Easy Beef Enchiladas
Our family loves Mexican food! We have something Mexican almost every week. These Easy Beef Enchiladas are one of my go-to, easy to prepare, family pleasing dinners. You can even make these ahead of time for those super busy evenings. Sometimes I make a double batch and freeze one in an aluminum pan for later. Easy Beef Enchiladas will be versatile dish to have in your recipe file!
Easy Beef Enchiladas
Here’s what you’ll need: ground beef, enchilada sauce, olive oil, jalapeños, cayenne pepper, black beans, 2 kinds of shredded cheese, tortillas, cilantro, onion, green onions, tomatoes, salt and pepper. That sounds like a lot of ingredients, but many are common pantry items.
Heat oil in skillet and saute onions with the jalapeños until softened. Add ground beef and cayenne and cook until meat is browned.
Combine ground beef mixture with 3/4 cup Colby and 3/4 cup Cheddar and beans.
Warm tortillas in microwave about a minute to make them softer and easier to work with. Place about 1/2 cup of filling in center of tortilla and roll up.
Spray baking dish with non-stick cooking spray. Pour one cup of enchilada sauce in bottom of baking dish and spread to cover. Place tortillas seam side down into baking dish. Top with remaining sauce and cheeses.
Bake at 375 degrees for 20 minutes until sauce is bubbling. Garnish with cilantro, green onions and diced tomatoes.

Ingredients
- 1 1/2 lbs Ground Beef
- 2-3 cans Enchilada Sauce adjust amount of sauce to your preference
- 1 Onion diced
- 1 Tbs Olive Oil
- 1 Tbs Jalapeños diced
- 1/2 tsp Cayenne Pepper
- 1 can Black Beans drained and rinsed
- 1 1/2 cups Colby Jack Cheese shredded
- 1 1/2 cups Cheddar Cheese shredded
- 10-12 Tortillas
- 2 Tbs Cilantro chopped
- 2 Tbs Green Onions chopped
- 2 Tbs Tomatoes chopped
- Salt and Pepper to taste
