Combine ground beef mixture with 3/4 cup Colby cheese, 3/4 cup cheddar cheese, and beans.
Warm tortillas in microwave about a minute to make them softer and easier to work with. Place about 1/2 cup of filling in center of tortilla and roll up.
Spray baking dish with non-stick cooking spray. Pour one cup of enchilada sauce in bottom of baking dish and spread to cover.
Place tortillas seam side down into baking dish. Top with remaining sauce and cheeses.
Bake at 375 degrees for 20 minutes until sauce is bubbling.
Garnish or serve on the side: cilantro, green onions and diced tomatoes.
