Pasta: Cook your choice of pasta according to the package directions. Choose the cooking time for al dente pasta. You don’t want to over-cook it. Drain the pasta and reserve about 1/2 cup of pasta water for adjusting the sauce’s consistency later, if necessary. As the pasta cooks, you can start cooking the bacon and chicken.

Bacon: First, I lay the thick-cut bacon strips gently into a large skillet over medium-high heat. Let them sizzle and crisp to that perfect texture, turning as needed. All stoves are a little different, so if your bacon starts to burn you may need to reduce to medium heat. Use a slotted spoon or tongs to transfer the cooked bacon slices onto a paper towel to absorb any excess fat.

You’ll use the same frying pan to cook the chicken. Drain the excess grease but allow about a tablespoon of the bacon fat to remain in the pan to add flavor to the chicken as it cooks. 

Chicken:  Next, for the chicken, use the same skillet to add that rich flavor intertwined with the cooked bacon. First, chop the chicken into bite-sized pieces. Season the chicken breast pieces with Italian seasoning, smoked paprika, salt, black pepper, and a dash of garlic powder. Ensure each piece is evenly coated for that punch of flavor. Then, it’s into the skillet for a nice sear, turning every 2-3 minutes until the chicken is thoroughly cooked and tender. Put the cooked chicken on a plate and set aside. 

This method yields crispy bacon and tender chicken as the foundational pieces for our creamy pasta dish, ensuring every bite is a harmonious blend of comfort and flavor.

Once the pasta, chicken, and bacon have reached their perfect state of crispy and tender bliss, it’s time to bring our creamy chicken and bacon pasta masterpiece to life. 

  1. In the same large skillet, add 1 tablespoon of olive oil and the frozen corn. Season with salt, black pepper, and paprika. If you like heat, you can add chili powder and red pepper flakes at this time. Cook over low heat for about 3 minutes, stirring occasionally. 
  2. Remove about half of the corn and place on a plate. 
  3. Add heavy cream to the pan with the remaining corn and bring to a low boil. 
  4. Add Parmesan cheese and stir until it’s melted into the cream sauce. 
  1. Add the cooked pasta and the seasoned chicken. Stir together until they are all bathed in the rich, creamy sauce we’ve prepared. If the sauce is too thick, add reserved pasta water at this time.
