To be completely honest with you our family doesn’t eat a lot of ham. I don’t know why because we all love it, but “ham” isn’t one of those things that immediately comes to mind when you’re planning dinners. However, we do eat ham for our holiday dinners at Christmas and Easter. And no matter how many people we’re feeding there is always leftover ham.

When our boys were younger I never had to worry about food going bad. They loved leftovers and were constantly checking the fridge for something to pop in the microwave and devour. Unlike our boys, my husband does not like leftovers at all. So, I’m always on the lookout for recipes that turn leftovers into brand new meals. This Leftover Ham and Potato Soup recipe is a winner!

Ingredients for Leftover Ham and Potato Soup

  • Milk
  • Butter
  • Potatoes
  • Chicken broth
  • Chicken bouillon
  • Garlic
  • Cheese
  • Onion
  • Carrot
  • Celery
  • Ham
  • Flour and hot sauce, optional

How to Make Leftover Ham and Potato Soup

Melt butter in a large pot over medium heat.
Add onions, celery, and carrots. Cook 3-4 minutes until tender.
Add diced ham and potatoes, and cook an additional 2 minutes.
Next, add garlic and saute about a minute.

Sprinkle flour over the top then gently stir to coat the vegetables and ham. (If you prefer a thinner soup you can omit the flour.)
Pour in the chicken stock and bouillon. Mix all ingredients together well.
Add salt and pepper.

Increase heat, bring to a boil and cook about 10 minutes or until potatoes are tender.
Reduce heat and add milk. Stir gently until soup thickens.
Taste and add more salt and pepper if desired.
Stir in cheese and cook until it’s all melted.

Tips & Tricks

  • No leftover ham? You can buy small packs of sliced ham in your grocery store.
  • Turn this recipe into a “chowder” by adding a bag of frozen corn at the same time you add the potatoes.
  • Add frozen broccoli for a Broccoli and Cheese soup with ham. Delicious!
  • Garnish with more cheese, green onions and crumbled bacon.
  • Dice leftover ham, divide into 2-3 cup portions, and freeze in plastic freezer bags. Cooked ham can be stored in the freezer for up to 2 months.

Ingredients
  

  • cup Butter

  • 2 cups Cheese shredded
  • Hot sauce optional
