This Healthy Salisbury Steak Crockpot recipe tastes just like the classic recipe. It’s made in your slow cooker, and no one will know it’s low carb!

Healthy Salisbury Steak in the Crock Pot

Now, I know what you’re thinking – Salisbury steak and healthy in the same sentence? You bet! We’re about to whip up a mouthwatering, guilt-free version of this classic recipe that’ll have you savoring every bite without any of the remorse. Whether you’re trying to watch your calories or just looking for a hearty, feel-good meal that won’t weigh you down, this recipe has got you covered.

So what exactly is healthier about this recipe? I’ve reduced the carbs by eliminating the typical bread crumbs and using crushed pork rinds instead. Even if you don’t like pork rinds, I encourage you to give them a try in this recipe! I’ve also added veggies to the gravy. What better way to sneak veggies into your diet than smothering them in gravy? And don’t worry about the gravy either. It is beef broth thickened with Xanthum gum. It tastes delicious, and you won’t miss the carbs!

This easy Salisbury Steak made in a crock pot is one of my favorite ground beef recipes. From the juicy beef patties to the flavorful gravy, it’s a meal the whole family loves.

Recommended Slow Cookers

I love cooking family dinners in my slow cooker, and I’ve had a few different ones over the years. No matter what your budget is, you can get a fantastic slow cooker! Here are my top 3 picks in different price ranges that I highly recommend.

A Great Basic Slow Cooker

If you’re just getting started cooking with a Crockpot, here’s an inexpensive classic version. I had one of these for years and cooked up many delicious family meals in it.

Programmable with Locking Lid

The programmable feature is a great if you’re away from home most of the day. You can set it to start cooking at a delayed time, and it will keep your food warm for you until you get home. The locking lid allows for transporting food safely without risking spillage.

Ninja Multi-Cooker

I absolutely LOVE this multi-cooker! When my trusty original Crockpot finally died, this is what I upgraded to. My favorite feature is that you can sear meat in the pot then switch it to the slow cooker setting, making it quick and easy to start your recipe in the morning with no dishes to wash. There are 8 cook settings in all including bake, braise, proof, sous vide, keep warm, slow cooker, sear, and steam.

Pork Rinds instead of bread crumbs

Special Ingredients for Low Carb Crockpot Salisbury Steak

Crushed Pork Rinds Instead of Breadcrumbs

If you’re trying to reduce your carb intake, you have to try crushed pork rinds in your recipes! Even if you don’t like them as a stand-alone snack, they mimic the texture of breadcrumbs and work as a perfect substitute in recipes. You can mix them into things like Salisbury steak and meatloaf or use them as a coating for frying or baking.

Xanthan Gum Instead of Corn Starch

You’ll only need a tiny bit of xanthan gum when you want to thicken your sauces and gravies. This stuff is like the superhero of thickening agents with fewer carbs than cornstarch or flour. Use just half a teaspoon or even less for a whole pan of gravy.

How to Make Low Carb Slow Cooker Salisbury Steak Recipe

Combine the lean ground beef, pork rind crumbs, Worcestershire sauce, egg, salt, and black pepper in a large bowl. Use your hands to knead the meat mixture until it’s well blended.

Divide into 6 equal portions and form into hamburger patties. Be sure to roll them firmly so they don’t fall apart during cooking.

Heat oil in a skillet over medium-high heat. Then place the hamburger patties into the hot skillet and sear evenly on both sides. Move the seared ground beef patties into the bottom of the slow cooker.

Melt butter in a large skillet and add the sliced onions and mushrooms. Sauté until softened.

Add the minced garlic and sauté for another 30 seconds.

Pour the beef broth into the skillet and simmer for 5 minutes.

Sprinkle the xanthan gum into the skillet and whisk to stir.

Pour the vegetable and mushroom gravy mixture over the hamburger steaks in the Crockpot.

Cover and cook on the high setting for 3-4 hours or the low setting for 6-8 hours.
