This Queso Chicken and Rice Bake is one of our go-to weeknight meals because it’s hearty, easy, and absolutely packed with flavor.
It’s also a one-dish wonder made with simple ingredients. Plus, this dump-and-bake recipe is topped with melted queso. Need I say more?

It’s basically pollo con queso meets Spanish rice casserole—kind of like something you’d find at your favorite Mexican restaurant, but with less effort and a lot more comfort. It’s the ultimate comfort food that satisfies even the pickiest eaters.
Ingredients for Queso Chicken and Rice Casserole
Here’s everything you need for this delicious chicken con queso recipe:
- 2 packages Knorr Mexican or Spanish Rice (use either one)
- 1 (14.5 oz) can chicken broth
- 1 (10 oz) can Rotel (diced tomatoes with green chiles)
- 10 oz water
- 1 packet taco seasoning (Old El Paso is my go-to)
- 4 chicken breasts (or thighs if you prefer)
- 1 cup Mexican-blend cheese (or pepper jack cheese for a little kick)
- 3/4 cup white queso (I use queso blanco from the produce section of most grocery stores)
- Fresh cilantro, chopped (optional but recommended!)
How to Make Queso Chicken and Rice
This recipe is easy enough to throw together on busy weeknights, and it’s the perfect TikTok make-everything-in-one-pan meal.
- Preheat & Prep: Preheat oven to 375°F. Spray a 9×13 baking dish with nonstick cooking spray.
- Season the Chicken: Trim excess fat from the chicken breasts. Season both sides of each piece with salt, pepper, and a small amount of the taco seasoning.
- Mix the Rice Mixture: Pour both packets of Spanish or Mexican rice into the dish. Add chicken broth, Rotel, water (fill the empty Rotel can with water and add it), and taco seasoning. Give everything a good stir.
- Add the Chicken: Place the chicken breasts into the rice mixture, making sure to nestle them down a bit. You want the flavor to soak into the chicken.
- Cheese Layer: Sprinkle the Mexican-blend cheese over the top. Cover tightly with aluminum foil.
- Bake It Up: Bake for 1 hour. Then remove foil and bake uncovered for an additional 30 minutes. Check that the internal temperature of the chicken reaches 165°F.
- Add the Queso & Toppings: Remove the dish from the oven and drizzle the melted queso over the top. Top with freshly chopped cilantro and any other favorite toppings, such as sour cream, red onion, or crushed tortilla chips.
