Ingredients
  

  • 1 stick butter unsalted
  • rotisserie chicken deboned and chopped
  • 2 cups frozen mixed vegetables
  • 1 box Red Lobster Cheddar Bay Biscuit Mix (11.36 oz box)
  • 2 cups milk
  • 10.75 oz can cream of chicken soup
  • 2 cups chicken broth
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Better Than Bouillon Chicken Flavor

Instructions
 

  • Debone the rotisserie chicken and chop into bite-sized pieces.
  • Preheat oven to 375 degrees Fahrenheit.
  • Cover the bottom of your baking dish with the butter, melted. You can place the baking dish with the stick of butter in your preheating oven or melt it in the microwave.
  • Add the cooked, chopped chicken into the baking dish and spread it out evenly.
  • Spread the frozen vegetables on top of the chicken in an even layer.
  • Do not follow the instructions on the biscuit mix. Dump the Red Lobster Cheddar Bay Biscuit Mix (11.36 oz box) and seasonings packet into a medium bowl. Add 2 cups of milk and stir together until smooth with a whisk.
  • Pour biscuit mix over vegetables in an even layer. Do NOT stir.
  • In the same bowl, make the sauce. Combine chicken broth, cream of chicken soup, Better Than Bouillon, black pepper, onion powder, and garlic powder. Stir with a whisk until smooth.
  • Pour sauce over the biscuit batter. Do NOT stir.
  • Bake in preheated oven, uncovered for 60 minutes or until bubbly and the top is golden brown. If it is bubbly but the top is not browned, turn the broiler on low for a few minutes to brown the top. Always watch it carefully to avoid burning when using the broiler.

    1. I am also interested to know if I can freeze this, I’m making meals for my friend having surgery. It was so good!

      1. Honestly, I have never tried freezing this. I think the filling will freeze fine. It’s the biscuit topping I’m concerned about. If I was making this ahead for someone, I think I would prepare the filling part and freeze it. Then include a box of the Red Lobster Biscuit topping and tell them to add that before baking. Hope that helps!

  2. So, this sounds wonderful and I really want to try it! But I’m a bit confused: does the biscuit layer go last or the sauce layer? Thanks! Also, what is a good side to go with this?

    1. I know it sounds a little strange, but pouring the broth/soup layer over the top of the biscuit layer is what makes it turn out “cobbler-like.” You can add the biscuit mixture last if you want a solid biscuit-like topping. However, if you want it to look cobbler-ish, add the soup/broth layer last.

    This is a good dinner recipe but you should really update the instructions to say put the broth mixture over the veggies and the biscuit mix over that.

    1. I haven’t tried making this a day ahead, but I would put everything together except the biscuit topping. Cover and store in the fridge, then mix the biscuit topping and pour it on right before baking. I would be concerned that the mix would soak up too much liquid and not bake up like a bread topping if it sat overnight.

  6. This works better if you put the broth mixture on the chicken/veggies first and then add the biscuit/milk mix on top of that. Also, you shared that this is gluten free, but only if you use the Gluten free Red Lobster mix (which is in the picture, but not specified in the recipe) and gluten free cream of chicken soup mix. Regular cream of chicken soup has wheat in it.

  7. I made this – it was great but the crust in the center never got really done. It was liquidy and the sides were a bit overdone.

Every oven is a little different, so it’s difficult to assess, but that could be the problem.

  8. I made a big mistake a ruined this casserole. It would have been delicious but it was mush. My fault. I followed your recipe to a T except I didn’t know the biscuit mix came in different sizes and had a package if the biscuit mix not a box. I mixed it with 2 cups of milk as the recipe calls for. Unfortunately I didn’t realize the box is way bigger than the package. Maybe put how many ounces on the recipe so nobody else has to throw their casserole away like I did. 😢😢
