Poblano peppers are a mild variety popular in Mexican cuisine. They are dark green in color, and the wide shape makes them perfect for stuffing. They are more about flavor than heat, so they are great for the whole family. 

Stuffed Poblano Peppers Ingredients

  • Poblano peppers
  • Ground beef
  • Taco seasoning
  • Shredded Mexican cheese
  • Cilantro
  • Olive oil

How to Make Stuffed Poblano Peppers

Brown the ground beef and drain off any excess grease.
Add taco seasoning and chopped cilantro. Stir to combine and set aside.

Cut Poblano peppers in half length wise. Cut around the stem to remove seeds.
Toss Poblano halves in olive oil to lightly coat.
Place in an air fryer at 400 degrees and cook for 5 minutes.

Remove peppers from the air fryer. Spoon ground beef mixture into each half, then top with shredded Mexican cheese.
Place back into the air fryer 3-5 minutes or until cheese is melted.
Serve topped with sour cream and sliced avocados. (Optional)
