Using an air fryer makes these Stuffed Poblano Peppers a quick easy dinner. This great recipe is similar to traditional stuffed peppers, but we’ll be using Mexican spices and Poblano peppers instead. Simply start with fresh Poblano peppers, add some taco-seasoned ground beef, top with cheddar cheese, and pop in the air fryer. It really is that simple! You’ll have these on the dinner table in under 30 minutes!

Poblano peppers are a mild variety of peppers popular in Mexican cuisine. They are dark green in color, and the wide shape makes them perfect for stuffing. They are more about flavor than heat, so they are great for the whole family.

Simple Ingredients for Stuffed Poblano Peppers

  • Poblano peppers
  • Ground beef
  • Taco seasoning
  • Shredded Cheddar cheese
  • Cilantro
  • Olive oil

How to Make Stuffed Poblano Peppers

  1. Use a large skillet to brown the ground beef and drain off any excess grease.
  2. Add taco seasoning, 1/2 cup of water, and chopped cilantro. Continue to cook beef mixture over medium heat as you stir. When everything is well combined, remove from heat and set aside. 
  1. Cut Poblano peppers in half length-wise. Cut around the stem to remove the seeds.
  2. Toss Poblano pepper halves in olive oil to lightly coat. Place the pepper halves in the air fryer basket and cook at 400 degrees for 5 minutes
  1. Remove peppers from the air fryer. Spoon ground beef mixture into each pepper half, then add shredded Cheddar cheese to the top of the peppers.
  2. Place peppers back into the tray of the air fryer. Reset air fryer to cook for 3-5 minutes or until the cheese is melted.

  • After filling and topping with Cheddar cheese, place back into the oven for 5-10 minutes or until the cheese has melted.

Storage for Leftovers

Place leftover peppers into an airtight container and refrigerate for up to 4 days.

To reheat the peppers in an air fryer, cook at 350 for 15-20 minutes.
