How to Make Taco Spaghetti
- Start by grabbing a large pot of water and bring it to a boil. Toss in your spaghetti noodles and a teaspoon of salt, making sure to follow the package directions to get them perfectly al dente. Once they’re done, drain them and set them aside for now.Â
- Next, heat up your oven-proof skillet over medium-high heat, adding a bit of olive oil. Throw in the diced onions and minced garlic, giving them a good stir until they’re just soft and golden.Â
- It’s time to brown the beef.  Add your lean ground beef into the skillet and break it apart with a spoon. Cook until there’s no pink left, and carefully drain any excess fat.Â
- Now, pour in the goodies:Â the Rotel tomatoes with green chilies, taco seasoning, black beans (drained), and that rich tomato sauce. Let everything bubble gently on medium heat. When it’s getting nice and saucy, stir in spoonfuls of cream cheese until it’s all melty and mixed.Â
- Bring back the cooked spaghetti, adding it to the beef mixture. Give it a good toss so all those noodles are coated in the saucy beefy goodness.Â
- Sprinkle generously with cheddar cheese, then slide the skillet into a 350 degrees F oven. If you don’t have an oven-proof skillet, transfer it to a baking dish. Bake it just until the cheese is bubbly and golden, about 10 minutes. Don’t forget to watch it closely!
- Finally, garnish your masterpiece with fresh cilantro and chopped green onions. Serve it up hot, maybe with a dollop of sour cream on top. Now, that’s what I call a perfect weeknight meal!

- Use a different shape of pasta:Â Instead of spaghetti, make it with ziti, penne, elbow, or any other pasta.Â
- Get creative with toppings:Â Add your favorite taco toppings like a dollop of sour cream, fresh cilantro, salsa, or more shredded cheese to make it uniquely yours.Â
How to Store and Reheat Taco Spaghetti
After savoring the delightful flavors of your taco spaghetti casserole, you may find yourself with leftovers. No problem at all! Let me share with you the perfect way to store and reheat your casserole so it tastes just as amazing the next time.Â
- First off, grab an airtight container. This will keep your casserole fresh and prevent any unwanted fridge odors from sneaking in.Â
- Next, when it’s time to reheat, you have a couple of options. If you’re in a hurry, popping it in the microwave will do the trick.Â
