  3.  In a large skillet, add a tablespoon of olive oil, chopped onion and minced garlic. Saute over medium high heat until the veggies soften. 
  4. Add the ground beef and continue cooking over medium-high heat, making sure to crumble it as it cooks. When the ground beef is fully cooked, drain the excess grease. 
  5. Stir in your favorite spaghetti sauce, and additional seasonings such as Italian seasoning, and a pinch of black pepper, stirring until everything is beautifully mixed. Reduce heat, and simmer for 5 minutes. Then remove from heat.

  2. Combine the noodles with the cottage cheese, plain Greek yogurt, and chopped green onions.

  • 1 bunch green onions chopped
  • 16 oz cottage cheese
  • 8 oz plain Greek yogurt or sour cream
  • 1 cup shredded cheddar cheese
