When we got married my Mom gave me an electric skillet that lasted over 20 years. When it finally died, this is the one I decided on. The base and handles detach for easy cleaning, and they can also be stored inside the skillet for compact storage. I’ve had it over 5 years now, and it’s still going strong.

Preparation Steps for the Meatloaf Mixture

  1. Break the ground beef apart and place it into a large bowl.
  2. Combine ground meat with bread crumbs, shredded parmesan cheese, Zesty Italian Seasoning, and Onion Soup Mix in the large bowl. This mixture is the foundation of our skillet meatloaf, providing the classic meatloaf taste with a flavorful twist.
  3. Incorporate the egg and a generous splash of Worcestershire sauce into the meatloaf mixture. These ingredients add moisture and enhance the savory flavor, ensuring your meatloaf is anything but dry.
  4. Mix thoroughly but gently to ensure the ingredients are fully combined without overworking the meat. This step is crucial for maintaining a tender and juicy meatloaf that’s a family favorite.
  1. Shape the meatloaf by covering it in plastic wrap. This technique allows you to easily form the meatloaf without it sticking to your hands. Plus, if you’re planning ahead, you can do this step earlier in the day or even the night before. Store the shaped meatloaf in the refrigerator until you’re ready to cook dinner.

Cooking Process in an Electric Skillet

  1. Start by preheating the electric skillet to 300 degrees F. Add a teaspoon of olive oil to the center of the electric skillet.
  2. Remove the plastic wrap from the flavorful meatloaf mixture and place it into the center of the electric skillet. Allow it to cook for 3-5 minutes or until the bottom is browned.
  3. While the meatloaf is browning, thoroughly wash the potatoes using a vegetable brush. Then cut the potatoes into wedges and cut a half stick of butter into 1/4 inch slices.
  1. Use 2 large spatulas to flip the meatloaf over.
  2. Place 3-4 pats of butter along one side of the meatloaf. Once the butter starts to sizzle, place the potato wedges flat-side down on top of the melted butter. Continue adding butter and potatoes until one side of the skillet is covered with potato wedges.
  1. Use 2 large spatulas to flip the meatloaf over again. Then repeat the process of melting butter and placing potatoes on the other side of the meatloaf. You can layer more potatoes on top of the bottom layer of potatoes if you need more.
  2. Place the lid back on the electric skillet and reduce the temperature to 275 degrees F. Allow the potatoes and meatloaf to cook for 20-25 minutes. Use a meat thermometer to check the temperature. Cook to an internal temperature of 160 degrees F, which is crucial for both safety and flavor.
  1. Drain a large can of green beans and dump them on top of the potatoes on each side of the meatloaf. Replace the lid and allow to cook for 5 minutes or until the green beans have heated through.
  2. Turn off the heat, remove the lid, and allow the meatloaf to rest for about 5 minutes before cutting to allow the juices to settle back into the meat. This ensures a juicy meatloaf.

Additional Tips and Serving Suggestions

After your flavorful meatloaf has filled the kitchen with savory scents and you’ve reached that perfect internal temperature of 160 degrees F, remember one important step before diving in: let the meatloaf rest. Allowing the meat to rest assures a juicy texture when you cut into it for serving. A knife or thin metal spatula makes slicing a breeze, ensuring crispy edges in every bite.
