Try these Oven-Baked Bang Bang Chicken Skewers for a delicious appetizer or main course! Made with tender chicken breasts and coated in a spicy sauce, they’re perfect for grilling season or anytime.
Cut the chicken breasts into 1-2 inch chunks. You can also use boneless skinless chicken thighs for this recipe.
Place the chicken pieces into a large bowl. Mix the chicken pieces with olive oil, garlic powder, onion powder, salt, and black pepper.
Cover the bowl and set it in the refrigerator to let the chicken marinate in the spices and olive oil mixture for at least an hour or overnight.
Choose your skewers: wooden or metal, it’s up to you. If you’re using wooden skewers, you’ll need to soak them in water for about 30 minutes before threading the chicken. This prevents them from burning in the oven or grill.
After marinating, it’s time to thread the chicken pieces onto the skewers. Thread the chunks of chicken one by one onto the skewers. It’s ok for the pieces to touch, but don’t cram them together too tightly. I usually add 6-8 pieces per skewer.
Make the Bang Bang Sauce
In a medium bowl combine the Thai sweet chili sauce, a good squirt of Sriracha, and a half cup of Kewpie mayo.
Season with salt, pepper, and red pepper flakes according to your preferred heat level.
Mix everything together until it looks smooth and fully combined. Cover and place in the refrigerator until ready to use.
Baking the Chicken Skewers
Prepare your baking sheet by lining it with parchment paper or aluminum foil for easy clean-up.
Pour about 1/2 cup of the bang bang sauce into a separate bowl. Use a basting brush to spread the sauce onto the skewered chunks of chicken. Serve the reserved bang bang sauce with the cooked chicken.
Bake at 450 degrees F. Cook for 15 minutes. After about 8-10 minutes in the oven, turn them over for an even cook. Return to the oven to cook for an additional 4-5 minutes. The total cooking time is about 15 minutes.
Use a meat thermometer to make sure they’ve reached an internal temperature of 165 degrees F.
To replicate the char you would get on an outdoor grill, leave the chicken skewers in the oven and turn your broiler on high. Watch the chicken closely so it doesn’t burn. Within 1-3 minutes your chicken will have a nice char just like grilling.

Toast some sesame seeds – Place about a tablespoon of sesame seeds into a small pan. Heat over medium-high heat until they are just toasted, about 2 minutes should do it. Sprinkle the toasted sesame seeds over the cooked chicken skewers.

Serve with lime – Squeeze a bit of lime juice over the top right before serving to bring out a burst of flavor that’s hard to beat. Alternatively, you can serve them with lime wedges.
Add some veggies – Before putting the skewers into the oven, add some chunks of green or red bell peppers and onions to the pan. They will cook along with the chicken and absorb some of the flavors from the pan drippings.
