Hearty Sausage Kale and Potato Soup: Zuppa Toscana

2-3lbsYukon Gold potatoesdiced into bite-sized pieces
1bunchkalewashed and chopped
2cupsheavy cream
1tbspItalian seasoning
1tspred pepper flakesoptional
salt and pepperto taste
½cupshredded parmesan cheese
Parmigiano Reggianofor garnish

Preparation
Wash and dice your potatoes into bite-sized pieces.
Rinse and chop the kale into bite-sized pieces. Remove and discard the thickest part of the stems.
Chop the onion and mince the garlic.
Cut the bacon into small slices.
Shred the parmesan cheese.
Cooking Instructions
Start by cooking the bacon in a large pot or Dutch oven over medium heat until it’s crispy. Once done, use a slotted spoon to move it to a plate lined with a paper towel to soak up the excess grease. Leave 1-2 tablespoons of bacon grease in the pot for the next step.
Add the garlic and onion to the pot and sauté them until they’re tender.
Stir in the Italian sausage, breaking it apart with a wooden spoon. Cook it until it’s nicely browned and crumbly. Drain excess grease.
Pour in the chicken broth and add the diced potatoes. Bring everything to a low boil and then let it simmer for about 10 minutes or until the potatoes are almost done.
Mix in the chopped kale, heavy cream, and Parmesan cheese. Then, season it with Italian seasoning, red pepper flakes, salt, and black pepper to taste. Let it simmer for about 5 more minutes to allow the kale to wilt and everything to warm through.
Taste, and add any additional seasonings if necessary.
Garnish each serving with crispy bacon bits and freshly shredded Parmigiano Reggiano. Serve it with a side of crusty bread for dipping.
