Preparation Tips Before Cooking

Before we begin the process of making sausage kale and potato soup, let’s get our prep-work done! A little prep goes a long way in making this hearty soup a family favorite on those cold winter nights. To save time at dinner, you can cut up your vegetables earlier in the day or the night before. Place cut potatoes in salted water and store in the refrigerator until ready to use.

  • Wash and dice your potatoes into bite-sized pieces. I like to use Yukon Gold potatoes. Because of their thin skin, no peeling is required. I do recommend peeling the potatoes if you choose to use russet potatoes.
  • Rinse and chop the kale into bite-sized pieces. Remove and discard the thickest part of the stems.
  • Chop the onion and mince the garlic.
  • Cut the bacon into small slices.
  • Shred the parmesan cheese.

Step-by-Step Cooking Instructions

Here’s how you whip up a batch of this comforting Sausage Kale and Potato Soup, perfect for those cold winter nights. Trust me, it’s an easy dinner that’ll become one of your favorite soups in no time.

  1. Start by cooking the bacon in a large pot or Dutch oven over medium heat until it’s crispy. Once done, use a slotted spoon to move it to a plate lined with a paper towel to soak up the excess grease. Don’t forget to leave 1-2 tablespoons of bacon grease in the pot for the next step.
  1. Add the garlic and onion to the pot and sauté them until they’re tender. This builds a flavorful base that makes this soup a family favorite.
  2. Stir in the Italian sausage, breaking it apart with a wooden spoon. Cook it until it’s nicely browned and crumbly. Drain excess grease.
  1. Pour in the chicken broth and add the diced potatoes. Bring everything to a low boil and then let it simmer for about 10 minutes or until the potatoes are almost done. This is when the potatoes become tender and the broth gets infused with all the wonderful flavors.
  1. Mix in the chopped kale, heavy cream, and Parmesan cheese. Then, season it with Italian seasoning, red pepper flakes, salt, and black pepper to taste. Let it simmer for about 5 more minutes to allow the kale to wilt and everything to warm through. Taste, and add any additional seasonings if needed.
  1. Garnish each serving with crispy bacon bits and freshly shredded Parmigiano Reggiano. Serve it with a side of crusty bread for dipping into this creamy, hearty delight.

Substitutions and Variations

Don’t fret if you need to swap things up a bit due to what you have in the pantry or your dietary needs.

  • Use chicken stock instead of chicken broth as a great alternative, and it won’t compromise the wonderful flavors of the soup.
  • For a lighter version or for dietary restrictions, there are several variations of cream, such as half-and-half, whole milk, or even a dairy-free option, to ensure everyone can enjoy a bowl.
  • Hot Italian sausage adds a spicy kick that elevates the soup’s flavor profile. Perfect for those who love a bit of heat.
  • Mild Italian sausage offers a gentler, savory taste for those preferring a less spicy soup.
  • Sweet Italian sausage brings a subtle sweetness that balances the hearty greens and earthy potatoes.
  • Turkey sausage: A great option for a lighter version without compromising the robust flavors. For those of you steering clear of meat or just prefer a different kind, there’s an array of vegetarian sausage options that fit perfectly into the mix, offering the same hearty satisfaction.
  • Russet or Yukon Gold potatoes both work well in this recipe. Yukon Gold potatoes have thin skins that require no peeling and give the soup a buttery taste (no peeling is always my favorite choice). Russet potatoes give the soup a heartier body due to their starchiness, thickening the broth beautifully.
  • For an even heartier soup, add a can of white beans such as cannellini beans to your soup. This is also a great way to stretch the leftovers.

What to Serve with Zuppa Toscana

You can’t go wrong with a few thoughtful touches to make the meal even more special. First off, consider adding a side of crusty bread; it’s perfect for dipping into the soup and makes sure you can soak up every last drop of that delicious broth.

Now, let’s talk garnishing – a simple yet effective way to elevate your soup. A sprinkle of Parmesan cheese on top adds a nice salty bite and a hint of sophistication. For a pop of color and a little extra flavor, adding a few red pepper flakes can provide a gentle heat that complements the soup’s richness wonderfully.

Tips & Tricks

  • Add the kale one large handful at a time, then stir gently to allow it to wilt. Repeat until all the kale has been added.
  • If you’re not a fan of ground sausage, make this soup with any type of kielbasa sausage instead.
  • Save time by doing the prep in the morning or the night before cooking. Keep diced potatoes in a bowl of water in the refrigerator to avoid drying out or turning brown.
  • Use microwave bacon, and sauté the onion and garlic in olive oil.
  • Instead of chicken broth, use chicken bouillon and water.
  • Use Yukon Gold potatoes that naturally have very thin skins to avoid peeling potatoes.

Storing and Reheating Leftovers

After you’ve enjoyed that delightful bowl of sausage kale and potato soup, you’ll often find you’re left with more than you can finish in one sitting. This is great news because it means you’ve got a delicious meal waiting for you, maybe for lunch the next day or even dinner later in the week. Keeping those leftovers tasting just as good as the day you made them is easy with a few simple steps.

  • Storing your soup: The key to maintaining the wonderful flavors and textures of your soup is to store it properly. Allow the soup to cool to room temperature, then grab an airtight container and pour the leftovers in. This airtight container will keep the soup fresh in the refrigerator and help prevent it from absorbing other flavors from your fridge.
  • Reheating your soup: When you’re ready to warm up with that comforting bowl of soup once again, you might find that it tastes even better the next day. The flavors blend together overnight, resulting in an even richer taste. You can reheat it on the stove over medium heat, stirring occasionally until it’s heated through. If you’re in a hurry, the microwave will work too, just be sure to cover it and stir it halfway through reheating.

So, don’t let those leftovers go to waste. With these simple tips for storing and reheating your sausage kale and potato soup, you’re all set for another cozy meal.
