1cupshredded parmesan cheese1/2 cup for soup, 1/2 cup for garnish
1tspred pepper flakes adjust for heat preference
2tbspfresh basilchopped
Instructions
Cut chicken into bite-sized pieces and season with Italian seasoning, garlic powder, and black pepper.
Heat the Dutch oven on medium, and add olive oil. Toss in the seasoned, diced, chicken breasts. Cook until chicken has reached an internal temperature of 165 degrees. Set aside.
Add diced yellow onion to the pot, cooking until tender. Then add minced garlic, tomato paste, and sun-dried tomatoes, cooking for an additional 1-2 minutes.
Add chicken broth and bring to a simmer. When it reaches a simmer, add the ditalini pasta. Cook about 9 minutes or until the pasta is almost done.
Lower the heat and mix in room temperature cream cheese and heavy cream, stirring until the cream cheese has melted and the broth becomes a creamy texture. Do not add the heavy cream to a boiling pot. This could cause the cream to separate.
Return the chicken to the pot with baby spinach, parmesan cheese, and red pepper flakes, cooking until the spinach wilts.
Garnish and serve with fresh basil, extra parmesan, and optional red chili flakes alongside crusty bread or a fresh green salad.
Notes
Variations of the Recipe
Chicken thighs can stand in for breasts, bringing a richer flavor to the table.
Coconut milk offers a delicious, creamy texture without the dairy.
Try other pasta options such as orecchiette pasta, medium shells, or orzo
Gnocchi offers a gluten-free option to replace the pasta and turns it into an even heartier meal.
Use rotisserie chicken or any leftover cooked chicken to save some time.
For a heartier, thicker soup use a full box of ditalini pasta (16 oz). For a thinner soup with more broth, use half a box of pasta. Adjust to your liking.
