These Reuben sliders are a bite-sized twist on the classic sandwich, featuring layers of corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing. Baked to golden perfection, they’re perfect for game day, St. Patrick’s Day, or any casual gathering. Customize with pastrami, provolone, pickles, and more for a fun variation!
Preheat and Prep: Start by preheating your oven to 350°F. Spray a 9x13 baking dish with nonstick cooking spray.
Slice the Rolls: Keep the rolls connected and slice them in half to create the top and bottom layers.
Assemble the Bottom Layer: Place the bottom layer of rolls in your prepared baking dish. Spread a generous amount of Thousand Island dressing over the bottom layer of rolls.
Layer the Corned Beef and Swiss Cheese: Add a thick, hearty layer of corned beef on top of the dressing. Then, top the corned beef with 6 slices of Swiss cheese.
Add the Sauerkraut: Now, drain the sauerkraut and squeeze out as much moisture as you can using paper towels or a clean dish towel. Add a layer of sauerkraut on top of the cheese. Then, top with the remaining 6 slices of Swiss cheese.
Place the Top Layer of Rolls: Carefully place the top layer of rolls over the cheese.
Butter Mixture: In a small bowl, melt the butter and add the garlic powder, onion powder, and Worcestershire sauce. Stir well to combine. Brush this melted butter mixture over the top of the rolls, making sure to cover them generously. Sprinkle the poppy seeds over the buttered rolls for a hint of crunch and added flavor.
Bake to Perfection: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the sliders are heated through and the cheese is melted. The foil helps keep the rolls soft and prevents them from drying out. Once they're nice and melted, carefully remove the foil.
Slice and Serve: Let the sliders sit for a couple of minutes to set. Then, slice them into individual sliders and serve.
