Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
First, allow unsalted butter to reach room temperature, then cream it together with both granulated and brown sugar in a large mixing bowl.
Add a large egg and a splash of vanilla extract. Blend together.
Measure out 1/2 cup of Lucky Charms cereal. Using a food processor, pulverize the cereal pieces into a fine powder.
Add the powdered cereal, all-purpose flour, salt, and baking soda into the buttery bowl of goodness. Mix on a low speed until it’s all incorporated.
Fold in the mini marshmallows by hand. Fold gently until the marshmallows are distributed evenly.
Using a large cookie scoop, shape the dough into rounds and place them on a parchment paper-lined baking sheet. Gently press some extra Lucky Charms marshmallows and cereal pieces into the top of each cookie. Space the cookies 1-2 inches apart on the baking sheet.
Keep an eye on your oven, and bake for 10-12 minutes or until the edges start to turn golden, yet the centers remain soft.
Allow the baked cookies to cool on the pan for 5 minutes before transferring them to a wire rack.
