Rub olive oil all over the beef chuck roast as a binder. Season it on all sides with salt, black pepper, and Italian seasoning.
Cut the onion into large chunks. Place half of the onion at the bottom of the slow cooker.
Place the seasoned beef roast on top of the onion. Add the remaining onion, garlic, beef broth, red wine vinegar, and Worcestershire sauce. Toss in the bay leaves and rosemary sprigs.
