Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
Mix flour, oats, sugars, baking powder, salt, and pumpkin pie spice in a medium bowl.
Combine butter, pumpkin, and egg using a stand mixer with the whisk attachment.
Add your dry ingredients to your pumpkin mixture and mix until well incorporated.
Scoop dough balls onto the prepared baking sheet using a 1.5-tablespoon cookie scoop.
Bake for 10-12 minutes. Allow to sit for 1 minute after removing from the oven. Then transfer the cookies to a cooling rack.
Whisk together maple syrup and powdered sugar in a small bowl until well incorporated.
Once cookies are thoroughly cooled, drizzle maple glaze over them with a spoon or piping bag.

Tips & Tricks
Be sure to use pumpkin puree in this recipe and not pumpkin pie filling.
If your canned pumpkin puree seems watery, pour it into a colander and drain off some of the liquid. You could also pour it onto paper towels and blot it.
Do not use quick cooking oats in this recipe. Whole old fashioned oats will yield the best texture cookies.
If you like nuts in your cookies, you can add 1/2 cup chopped pecans into the cookie dough.
