Instructions
Prep the Chicken: Filet each chicken breast into two thin cutlets. Pat dry with paper towels, then season both sides with salt, pepper, garlic powder, and Italian seasoning.
Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 4 minutes per side, until golden brown. They don’t need to be fully cooked yet. Transfer to a plate and set aside.
Start the Sauce: Reduce the heat to low, add the minced garlic, and sauté for about 1 minute until fragrant (don’t let it burn).
Deglaze & Reduce: Pour in the white wine and increase the heat to medium. Use a wooden spoon to scrape up all the brown bits from the bottom of the pan. Let the wine simmer until reduced by about half—this concentrates the flavor.
