Melisha Kreppein
This Bruschetta Pasta Salad is a fresh and flavorful summer side dish made with bow tie pasta, juicy Roma tomatoes, fresh basil, garlic, balsamic vinegar, and Parmesan cheese. Ready in just 20 minutes, it's the perfect make-ahead recipe for potlucks, cookouts, picnics, and family dinners.
Prepare the Tomato Mixture: Dice the tomatoes and chop the basil. Add the tomatoes, garlic, basil, olive oil, balsamic vinegar, and oregano to a large bowl. Stir to combine and refrigerate for about 10 minutes.
Cook the Pasta: Bring a large pot of water to a boil. Cook the bow tie pasta according to the package directions until al dente.
Chill the Pasta: Drain the pasta into a colander. Rinse under cold water to stop the cooking process, then let the noodles cool completely.
Combine Everything: Add the chilled pasta to the tomato mixture. Stir in the Parmesan cheese. Season with salt and pepper to taste. Toss until everything is evenly coated.
Chill and Serve: Serve immediately or cover and refrigerate for about 30 minutes before serving.
