French Onion Ground Beef and Rice Casserole (Easy One-Dish Family Dinner)

This French Onion Ground Beef and Rice Casserole combines the savory flavor of French onion soup with hearty ground beef, tender mushrooms, and buttery, fluffy rice. It’s an easy, one-dish dinner perfect for a busy weeknight or cozy family meal. With simple ingredients and rich, comforting flavors, this casserole is guaranteed to become a new favorite in your dinner rotation.
In a large skillet, heat olive oil and 1 teaspoon butter over medium-high heat. Add diced onion and sliced mushrooms. Cook until onions are softened and mushrooms release their juices.
Add ground beef and the packet of Lipton Onion Soup Mix. Cook until beef is browned. Drain excess grease.
Spray a 9x13 casserole dish with nonstick cooking spray. Add uncooked rice, beef consommé, beef broth, and French onion soup. Stir in the cooked beef mixture until evenly combined.
Cut the stick of butter into small pieces and scatter them evenly over the top.
Cover tightly with aluminum foil and bake for 30 minutes.
Remove foil, stir, and bake uncovered for another 30 minutes, or until rice is tender and liquid is absorbed.
Optional: Sprinkle shredded Swiss or Gruyere cheese over the top and bake 5 more minutes until melted.
Garnish with French-fried onions or chopped green onions before serving, if desired.
