Easy Baked Pork Tenderloin with Potatoes and Veggies (Sheet Pan Meal)

This sheet pan pork tenderloin dinner is an easy one pan meal made with juicy baked pork, roasted potatoes, and simple vegetables. It is made with simple ingredients, takes about an hour from start to finish, and is perfect for busy weeknights when you want a flavorful, no-fuss dinner the whole family will love.
2lbpork tenderloinI used prepackaged garlic and herb flavor.
2lbsrusset potatoeswashed and cut into 1 1/2-2 in-cubes
2cupsbroccoli florets
1cupbaby carrots
2tbspolive oil
2tspgarlic powder
2tspItalian seasoning
salt and black pepperto taste
Instructions
Preheat the oven to 375 degrees and line a rimmed baking sheet with parchment paper or aluminum foil.
Wash and dice the potatoes into 1½ to 2 inch cubes. Cut the broccoli into florets.
Add the potatoes, broccoli, and carrots to a large bowl. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt and black pepper. Toss to coat.
Spread the vegetables evenly on the sheet pan and create a space in the center.
Place the pork tenderloin in the center of your sheet pan.
Bake for 45 minutes.
Remove the pan from the oven and let the pork rest for 5 minutes. Slice the pork into 1½ to 2 inch pieces.
Return the pan to the oven and cook for another 5-10 minutes, until the pork is fully cooked. Check for doneness with an instant-read meat thermometer. Pork is done when the internal temperature reaches 145°F.
