Make your own Starbucks Bacon and Gruyere Egg Bites at home with this easy copycat recipe! These protein-packed, flavorful bites are perfect for a quick breakfast or snack. Enjoy a delicious, homemade version of this Starbucks favorite!
Blend it: Combine whole eggs, egg whites, gruyere cheese, cottage cheese, salt, pepper, heavy cream, and three slices of crispy bacon in the blender. Give it a good blend for about 30 seconds to ensure everything is nicely mixed.
Prep molds: Spray two silicon molds with non-stick cooking spray. Pour the egg mixture into each mold, filling them up to about two-thirds.
Add more bacon: Chop up the remaining bacon slices and sprinkle them evenly among the molds.
Get steamy: Cover the molds tightly with aluminum foil. A tight seal is crucial for creating that perfect, steamy environment inside the Instant Pot. Place the trivet in the pot and pour in two cups of water.
Cooking time: Stack the molds on the trivet, slightly offset to allow steam to circulate. Seal the Instant Pot and cook on high pressure for 8 minutes. At the end of the cooking time, allow the pressure to release naturally for 10 minutes before manually releasing any remaining steam.
Serve or store: Carefully remove the molds, let them cool for a moment, and then pop out the egg bites.

Tips & Tricks
To make it easier to load the egg bites into the Instant Pot: remove the trivet from the Instant Pot and set it on the counter, place the loaded and wrapped silicon molds on the trivet (remember to off-set them), then use the handles of the trivet to lower the molds into the Instant Pot.
Wipe off the tops of the silicon molds with a paper towel before covering with aluminum foil to ensure a nice seal.
Store egg bites in the refrigerator in the silicon molds. They come with lids!
