Chicken Fajita Bowl (Easy, Flavorful, and Healthy Dinner)

This Chicken Fajita Bowl is a fresh and flavorful dinner made with marinated chicken, sautéed bell peppers and onions, cherry tomatoes, avocado, and lime juice. It is an easy, healthy meal that comes together in about an hour and is perfect for busy weeknights or meal prep.
In a bowl, mix 3 tablespoons olive oil with salt, cumin, coriander, black pepper, and paprika. Add the chicken strips and toss to coat. Let marinate for 30 minutes to 2 hours.
Cook the marinated chicken over medium-high heat for 7 to 8 minutes, turning halfway through.
Place cooked chicken on a paper towel-lined plate to absorb excess oil and rest.
In the same pan, heat 1 tablespoon olive oil. Sauté bell peppers and red onion for 5 to 6 minutes until slightly softened. Let cool for 5 minutes.
In a large bowl, combine chicken, cooked peppers and onions, and cherry tomatoes.
