A comforting casserole with tender chicken, buttery rice, sweet yellow onions, and melty Gruyère topped with delicious French fried onion. Made with simple ingredients, this easy recipe is full of rich flavors and sure to become one of your favorite recipes.
Prep the pan. Preheat oven to 400°F. Spray a 9x13 baking dish with nonstick spray.
Mix the base. In the baking dish, combine rice, beef consommé, French onion soup, and sliced yellow sweet onions. Stir well.
Add butter. Slice the butter into pats and scatter across the rice mixture.
Layer the chicken. Place chicken thighs on top. Sprinkle with Lipton Onion Soup Mix and tuck in fresh thyme sprigs.
Bake covered. Seal tightly with aluminum foil and bake 45 minutes.
Cheese & crunch. Remove foil and top with shredded Gruyère and crispy French-fried onions.
Finish baking. Return to the oven uncovered for 15–20 minutes, until golden brown and bubbly.
Rest & serve. Let the casserole sit 5 minutes. Garnish with parsley and serve warm.

Variations & Substitutions
Gluten-free: Use GF onion soup mix and fried onions.
Different cheeses: Try Swiss, mozzarella, or a cheddar cheese-Gruyère mix.
Make-ahead: Assemble in the morning, refrigerate, and bake before dinner.
Use rotisserie chicken: Skip step 4 (adding uncooked chicken), and bake covered for 45 minutes. Then remove the foil and stir in shredded rotisserie chicken. Continue with the remaining steps.
No beef consommé? Substitute beef broth or chicken broth instead.
No Lipton Onion Soup Mix?Use a combination of garlic powder, onion powder, and minced onions.
Use boneless, skinless chicken breasts: While I prefer using chicken thighs in this dish, chicken breasts will also work.
