Warm the beef: In a large skillet over medium heat, cook your choice of cooked ground beef or leftover shredded beef until heated through. If using ground beef, cook until browned and drain off any excess grease. Season with taco seasoning or a simple mix of chili powder, garlic powder, onion powder, and salt.
Prep the base: In a small saucepan, prepare your cilantro lime rice (or brown rice/cauliflower rice) according to package instructions. Use chicken broth instead of water for extra flavor. Once cooked, fluff with a wooden spoon and add some fresh, chopped cilantro and a squeeze of lime juice.
