Cut the salmon into 1-inch pieces. Place the salmon pieces in a bowl. Add the lemon juice, salt, and pepper. Toss to coat.
In a separate medium bowl, whisk together the honey, soy sauce, and minced garlic. Add the salmon cubes to the honey mixture and toss until coated. Cover and refrigerate for 30 minutes.
Preheat the air fryer to 385 degrees. Spray with nonstick cooking spray. Use tongs to transfer the salmon pieces to the air fryer basket. Arrange them in a single layer. Do not pour the marinade into the basket. Air fry for 3 minutes.
