Simple Cooking Instructions

  1. Marinate the Chicken: In a medium bowl, whisk together all the marinade ingredients. Add the chicken and toss to coat. Cover and marinate for at least 1 hour or overnight for best flavor.
  2. Cook the Chicken: Heat a skillet over medium-high heat. Cook the marinated chicken for 4–5 minutes on each side, or until the internal temperature reaches 165°F. Remove from the pan and set aside to rest. Alternatively, you could grill this chicken to maximize the smoky flavors!
  1. Make the Street Corn: In a medium bowl, mix together the drained corn, diced red onion, diced jalapeño, and chopped cilantro.
  1. In a separate small bowl, stir together the Mexican crema, mayonnaise, lime juice, Tajin, salt, and pepper until smooth. Pour the sauce over the corn mixture and fold everything together until evenly coated. (Wait to add the cotija cheese until just before serving.)
  1. Prepare the Rice: Cook the white rice according to the package instructions. Once done, stir in the lime juice and chopped cilantro. Fluff with a fork to combine. (Check out my full recipe for Cilantro Lime Rice.)
  2. Assemble the Bowls: Spoon a layer of cilantro-lime rice into each bowl. Spoon the Street Corn mixture over the chicken. Slice the cooked chicken into bite-sized pieces and add it on top.

Make-Ahead Instructions

Want to make these Street Corn Chicken Rice Bowls even easier for a busy night? With a little planning, you’ll have a colorful, flavor-packed meal ready to go, perfect for busy weeknights, meal prep, or even casual entertaining! Here’s how you can prep ahead and save time:

  • Marinate the Chicken: Mix the marinade and coat the chicken up to 24 hours in advance. Keep it covered in the fridge until you’re ready to cook. The longer it marinates, the more flavorful and tender it will be!

  • Prep the Street Corn Mixture: You can mix the corn, red onion, jalapeño, and cilantro together and toss it with the dressing. Store it in an airtight container in the fridge.
Important: Don’t add the cotija cheese yet! Wait until right before serving to sprinkle it in so it stays fresh and crumbly.

  • Cook the Rice Ahead: Prepare the cilantro-lime rice up to 1–2 days in advance. Store it in the fridge and simply reheat when you’re ready to assemble your bowls.

  • Chop Garnishes: Slice green onions, chop extra cilantro, and crumble queso fresco ahead of time. Store them separately in small containers or zip-top bags so they’re ready to grab when assembling.

  • Optional: Slice the avocado fresh when serving to prevent browning, but you can prep everything else to make dinner come together in minutes

Tips & Tricks

  • Let the chicken rest for a few minutes before slicing. This helps lock in the juices and keeps the chicken extra tender and flavorful.
  • Hold off on adding the cotija cheese until just before serving. This keeps it fresh and crumbly instead of getting too soft in the corn mixture.
  • Want even more flavor? Add an extra squeeze of lime juice, some Chipotle Ranch Dressing, and a sprinkle of Tajin right before digging in!
