The stars of the show: fresh strawberries and blueberries. I always find that choosing the freshest berries I can lay my hands on ensures the best parfait experience. Luckily for us, these summer berries are not only at their most flavorful during the warmer months, but they’re also often at their lowest prices. This makes crafting this delightful dessert not just a treat for the taste buds, but also a perfect way to celebrate the season, whether it be a casual gathering or a festive Fourth of July party

Homemade Whipped Cream and Strawberry Cream Filling

Here’s how I whip up the homemade whipped cream topping and strawberry cream filling, both key components for our summer berry parfaits. Trust me, once you’ve made your own, you’ll never go back to store-bought. The key here is getting those stiff peaks for a luxurious texture that makes every spoonful heavenly.  

  1. First, take 2 cups of fresh strawberries and blend them in a blender or food processor until smooth. Summer berries, especially strawberries, bring that natural flavor we all crave. 
  2.  Next, strain the blended strawberries through a sieve to remove those pesky seeds and set aside. This step ensures our cream has that silky texture. 
  3. Pour 1 cup of heavy cream into a chilled large mixing bowl.
  4. Use an electric mixer on medium-high speed to beat the cream. Watch closely for the cream to thicken and form stiff peaks; this takes about 2-3 minutes.
  5. Add ½ cup powdered sugar to the cream for a touch of sweetness. Scrape down the sides of the bowl and continue to mix for another minute. 
  6. Scoop half of the whipped cream into a piping bag, ready to adorn the tops of your delicious strawberry blueberry parfait.
  7. Then, in the same mixing bowl, mix 8 oz of cream cheese. The cream cheese adds a richness that balances the sweetness perfectly. Mix on medium-high speed for 1-2 minutes. 
  8. Finally, pour in the strained strawberry juice, scrape down the sides of the bowl, and blend until the mixture is smooth. Then scoop it into a piping bag ready for layering. This strawberry cream is the heart of our parfait, offering both a visual and flavorful third layer that complements the fresh berries elegantly. 

Layering Your Parfait

Layering your parfait is quite an artistic endeavor, and it’s one of my personal favorites when it comes to making desserts for a hot July 4th celebration or just a refreshing treat on a long, summer day. Here’s how I bring together the vibrant fresh berries and lush creams to create that perfect berry parfait. 

  1. Begin by slicing the remaining fresh strawberries thin enough so they can easily stand along the inside edges of your clear parfait glasses. This not only makes each bite berry-packed but ensures a stunning visual appeal with the bright red of strawberries against the glass. 
  2. Cut or break the angel food cake into bite-sized pieces and set aside. 
  3. Place a layer of the angel food cake pieces into the bottom of each of the parfait glasses. 
  4. Stand the strawberry slices around the inside edge of the glasses.
  5. Next, carefully pipe in a layer of the strawberry cream filling, letting it nestle between the strawberry slices and adding that creamy, sweet depth. The natural flavor of strawberries here is just sublime. 
  6. Follow with a generous layer of fresh blueberries to introduce a delightful pop of blue, making it not just a delicious treat but also a nod to the red, white, and blue for any Fourth of July gathering. Be sure to place the blueberries along the edge of the parfait glasses so we can see that pop of blue from the outside of the glasses. 
  7. Repeat the layers: angel food cake, strawberry slices, strawberry cream, and blueberries. Continue to repeat the layers until your container is almost full leaving room for the homemade whipped topping. 
  8. To top it off, pipe on a hearty swirl of homemade whipped cream, achieving those stiff peaks that offer the perfect balance to the fresh fruit and cream cheese layers below. It’s like the finishing touch on a masterpiece. 
  9. Refrigerate the parfaits until ready to serve. Enjoy!
