When it comes to holiday baking, you want something special. Something that looks like you went above and beyond for your guests and perhaps something with a little sparkle. But there are so many demands on your time, what can you possibly make quickly that would be impressive?

If you’re looking for a holiday dessert idea with high impact that can be made in a small amount of time, these Sparkling Snowman Cupcakes are the project you’ve been looking for! Made with a boxed cake mix, sparkling sugar, and decorated with icing and peanut butter chips, they come together quickly. They are also super cute, easy to make, and they really do sparkle! And who doesn’t need a little extra sparkle in their holiday season?

What you’ll love about this recipe:

  • KID FRIENDLY – If your kids love baking with you, these are the perfect project to do together. They’ll enjoy frosting, dipping the tops of the cupcakes in the sparkling sugar, and decorating the snowman faces.
  • CUTENESS OVERLOAD – So stinking cute! Perfect for taking to a Christmas party!
  • USE ANY KIND OF CAKE MIX OR RECIPE – Use a prepared box cake mix or any kind of cake you love. A red velvet cake mix, German chocolate, or coconut would all be great choices, too.

Ingredients for Sparkling Snowman Cupcakes

You’ll need a boxed white cake mix (plus ingredients listed on the box), butter, vanilla extract, confectioner’s sugar, milk, butterscotch chips, sparkling sugar sprinkles, and black decorating icing. To make it even easier, use mini chocolate chips instead of the black cake icing.

Bake and prepare cupcakes according to box directions. Then allow to cool while making frosting.
NOTE: You can use pre-made icing, but the frosting recipe below makes easy-to-spread, smooth frosting that the sparkling sugar sprinkles stick to nicely.

Spread a layer of frosting onto each cupcake, making it as smooth as possible.

Pour sprinkles into a bowl, and dip each frosted cupcake into the sprinkles – making sure all of the frosting is completely covered.

Using the black decorating icing (or mini chocolate chips), create dots for eyes and a mouth for the snowman.
Add a peanut butter or butterscotch chip in the middle for the snowman’s nose.
NOTE #1:  If your chocolate chips don’t stay in place well, you may need to use the chocolate icing. The sparkling sugar sprinkles may make it harder for the chocolate chips to stick well. The black icing worked great!
NOTE #2:  Don’t use gel icing. It doesn’t work well for these snowmen.

Cute, easy and they ARE actually SPARKLING Snowman Cupcakes. Love these!
