A quick note: I prepared this easy soup recipe in my Ninja Multi-Cooker. One of my favorite things about my Ninja Cooker is that you can sauté and slow cook in the same pot. If you’re using a conventional crockpot, you can sauté your vegetables on the stovetop, or skip the sautéing and add them right into the crockpot.

  1. First, drizzle a bit of olive oil onto the bottom of the slow cooker. 
  2. Add diced onions, chopped celery, and matchstick carrots. Sauté on high heat, stirring often until veggies are soft. 
  1. Season one side of the fresh skinless chicken breasts with Italian seasoning, parsley, and thyme. Then place them seasoned-side down on top of the tender veggies. Now season the other side of the chicken breasts. This ensures every spoonful is packed with flavor. You can also use boneless skinless chicken thighs if desired. 
  1. Now, pour in the low-sodium chicken broth or chicken stock. Top the uncooked chicken with minced garlic, and add some to the soup as well. 
  2. Set your slow cooker on low and let it do its thing for about 6-8 hours, or on high for a quicker 3-4 hours till the chicken is tender and easily shreds with a fork. 
  1. At the end of the cooking time, remove the cooked chicken breasts and place them on a plate or cutting board. Use 2 forks to shred the flavorful chicken into small pieces. Return the shredded chicken to the slow cooker and stir. If you are not serving the Olive Garden Chicken Gnocchi Soup immediately, set the slow cooker to low heat or warm until 30 minutes before serving. 
  1. About 20-30 minutes before serving, stir in the heavy whipping cream and a generous amount of grated parmesan cheese. Stir to combine. Now add the potato gnocchi and gently stir again. Finally, add the fresh spinach and stir as it heats until the spinach is covered in the creamy soup.
  1. Do a quick taste test and adjust the seasoning including salt and black pepper as necessary. If using fresh herbs, this is the time to add them. 
  2. Optional: For a perfectly thickened, creamy texture, add a cornstarch slurry. Combine 1-2 tablespoons cornstarch with 2-4 tablespoons of water. Whisk together until smooth and add to the slow cooker. If you added a lot of grated parmesan cheese, your soup may already be thick enough. If so, you can skip this step. 
  3. Cover and allow to cook another 30 minutes.

Ingredients
  

  • 2-3 boneless, skinless chicken breasts
  • 1 medium onion diced
  • 2-3 ribs celery diced
  • 1 ½ cups carrots chopped matchstick style
  • 2 tbsp olive oil
  • 4 cups chicken broth
  • 3-4 cloves garlic minced
  • 1 quart heavy cream
  • ¾ cup parmesan cheese grated
  • 2 packages gnocchi
  • 1 package baby spinach leaves
  • 1 tsp parsley
  • 1 tsp thyme ground or leaf
  • 1 tsp Italian seasoning

Instructions
 

  • Dice onions, celery, and cut carrots into matchstick pieces.
  • Drizzle olive oil into the cooker. Add chopped vegetables. Sauté on high heat, stirring often, until veggies are tender.
  • Season both sides of the chicken breasts with Italian seasoning, parsley, and thyme. Place on top of the cooked vegetables in the crock pot.
  • Pour in the chicken broth.
  • Add garlic to the top of each chicken broth and some into the broth as well.
  • Cover and cook on high heat 3-4 hours or on low heat 6-8 hours.
  • At the end of the cooking time, remove the cooked chicken breasts and place them on a plate or cutting board. Use 2 forks to shred the chicken into small pieces. Return the shredded chicken to the slow cooker and stir.
  • About 20-30 minutes before serving, stir in the heavy whipping cream and grated parmesan cheese. Stir to combine. Now add the potato gnocchi and gently stir again. Finally, add the fresh spinach and stir as it heats until the spinach is covered in the creamy soup.
