Red Velvet Marshmallow Dip

The star of this charcuterie board is the luscious Red Velvet Marshmallow Dip. Yum! This sweet, creamy dip goes well with every item we’ll include on this board and also gives it a great pop of color.

There is one important step we need to complete before preparing the dip. We must proof the cake mix. Because this cake mix was sold with the purpose of being cooked, it’s best to heat treat it before using it in a raw dip. This will kill any potential bacteria in the raw flour.

Preheat your oven to 350 degrees.
Place parchment paper on a baking sheet.
Spread the dry cake mix right out of the box over the baking sheet.
Bake for 6 minutes, then take out and let cool completely.

In a large mixing bowl, place the cream cheese, marshmallow fluff and vanilla extract.
Mix together with an electric hand mixer or a stand mixer with paddle attachment for about 3 minutes until well combined.

Now it’s time to add the red velvet cake mix. Be sure to stop and scrape the bottom of the bowl as you mix to be sure everything is combined well. Mix another 3 minutes.
Add in 1 tablespoon of heavy whipping cream and mix again for about 2 minutes. If the dip is too thick, add another tablespoon of the heavy whipping cream. Repeat until your desired consistency is reached. You want it to be thick but not stiff to allow for easy dipping.

Put the dip into a serving bowl and gather all the goodies to begin assembling the charcuterie board.

Assembling the Red Velvet Dessert Charcuterie Board

Make sure your charcuterie board is well cleaned and dry.
Place the bowl of dip in the center of the board.
Arrange the chocolate bars in a straight line on one side of the bowl taking them all the way to the edge of the board.
Place the cookies & cream bars on the opposite side in the same way.
The chocolate bars and dip bowl should make a horizontal line across the board.
Next, grab a large handful of pretzels and place them diagonally from the bowl to the top right corner of the board.
Repeat with another handful of pretzels on the lower half of the board to the bottom left corner.
Now for the graham crackers. Break some into single pieces and leave some double width. Place the wider graham crackers in the top left and bottom right of the board. Stack them toward the center.
The pretzels and graham crackers should make an “X” pattern on the board.
Next, place sugar cookies in a vertical line down the center.
Use fresh strawberries to fill in any gaps where you can see the board peeking through. As you place them, repeat the same pattern on the opposite side of the board.
The tiny sections of the chocolate bars can be used to fill in any small spaces.

Now serve and enjoy!
