Oven Baked Tacos
Easy week night family pleasing meals don’t get much simpler than this!
Oven Baked Tacos are a regular dinner at our house. The kids love them because well, it’s tacos for dinner! My husband loves them because he loves anything Mexican. I love them for several reasons I don’t share with them, but I will let you in on my little secrets.
3 Reasons You’ll Love Oven Baked Tacos
You can hide vegetables in them. Adding a can of Rotel or salsa will sneak a few extra vegetables into your meal. My kids don’t usually add salsa or tomatoes to their build-your-own tacos, but they don’t complain or seem to notice when they’re already included in Oven Baked Tacos.
They will save you money. The most expensive part of any meal is usually the meat. Bulk up the ground beef by adding a can of refried beans. This creates more volume, the beans are more filling, and they are much less expensive than meat.
Less mess to clean up. When serving traditional tacos, there are always bits of beef and shredded cheese to clean up after dinner. Pre-baking these ingredients into taco shells makes the tacos easier to eat and less messy. The shredded cheese gets melted and helps hold the other hot ingredients in the taco. More food makes it into your mouth and less ends up on the table.
Oven Baked Tacos
Gather the typical taco ingredients: Ground beef, taco seasoning, taco shells and shredded cheese. In addition, you’ll need a can of refried beans and a can of diced tomatoes and green chilies or salsa.
Brown the ground beef in a large skillet and drain off any excess fat.
Add taco seasoning, refried beans, tomatoes and 1/2 cup of water.
Mix well and bring to a boil. Reduce heat and simmer 5 minutes.
Arrange taco shells in a 9″x13″ baking dish with sides. Spoon beef mixture into shells then top with shredded cheese. Bake for 10 minutes at 400 degrees.
Serve with cold toppings such as diced tomatoes, shredded lettuce, sour cream and additional shredded cheese.

- 1 lb Ground Beef
- 1 packet Taco Seasoning
- 1 can Refried Beans
- 1 can Rotel or Diced Tomatoes and Green Chilies
- 1/2 cup water
- 1 box Crunchy Taco Shells
- 1 cup Shredded Cheddar Cheese
- Shredded Lettuce
- Diced Tomatoes
- Sour Cream
Instructions
- Preheat oven to 400 degrees.
- Brown ground beef in large skillet and drain off any excess fat.
- Add taco seasoning, refried beans, tomatoes, and water. Mix well and bring to a boil.
- Reduce heat and simmer 5 minutes.
- Arrange taco shells in a 9×13 baking dish with sides. Spoon beef mixture into shells and top with shredded cheese.
- Bake for 10 minutes.
- Serve with additional toppings such as shredded lettuce, diced tomatoes, sour cream and additional shredded cheese.
