Serves: 10 servings
  • 1.5 pounds Ground Beef
  • 1 large Baking Potato
  • 2 Tbs Italian Seasoning
  • 1 lb bag Mixed Vegetables, frozen
  • 2 cans Diced Tomatoes (I used basil, onion, and garlic flavored)
  • 1 box Beef Stock
  1. Peel and dice the potato. Bring to a gentle boil in a small pot. Cook for 12-15 minutes until just done. When you can stick them with a fork, they are done.
  2. In a large pot, cook ground beef until browned. Drain excess grease from the pot, then add 1 tablespoon of the Italian Seasoning and stir.
  3. Add beef stock, frozen vegetables, and canned tomatoes to the pot.
  4. Add cooked potatoes and stir gently.
  5. When all ingredients are combined, add another tablespoon of Italian Seasoning. Stir, then let simmer for 15-20 minutes or until vegetables are cooked.
